What is a baker's percentage?

Every ingredient is measured against total flour weight, and flour is always 100%. So 75% water means 75 g of water for every 100 g of flour — that's 75% hydration. Math Loaf opens with a one-screen worked example the first time you launch it, and you can revisit the idea any time by opening a formula.

How do I scale a formula?

Use the segmented control in the header to drive the formula from a flour weight, a total dough weight, or a number of units (with an optional loss percentage for dough left in the bowl and on the bench). Switching the basis never changes the formula's percentages — only the resulting grams.

How does the hydration dial work?

Drag the dial to sweep hydration up or down; every ingredient weight updates as you move, with a light tap at each whole percent and a firmer notch at 65%, 70%, 75%, and 80%. Tap the readout to type an exact value, or use VoiceOver's increment and decrement actions if you're not dragging.

What does the final-dough column show?

When a formula has a preferment — a levain, poolish, or biga — Math Loaf shows both the overall formula (every ingredient across the whole bake) and final dough (what you actually weigh out at final mix, with the preferment's own flour and water already subtracted).

I edited a bundled formula — where did it go?

Editing one of the built-in formulas (Country Sourdough, Baguette, Ciabatta, and the rest) saves your changes as your own copy and leaves the original untouched. If you've deleted a bundled formula and want it back, use Restore Bundled Formulas in Settings — your own formulas are left alone.
